Preparation

  1. Bring the water to a boil with 1 tbsp of vinegar

  2. Add the Agar Agar Powder and stir well. Cook it for 2 minutes.

  3. Cool the mass now. I tipped it into a square plastic jar.

  4. Place the jar in the fridge for 2 hours. The tokoroten becomes star

  5. Cut the solid mass now into cubes. Just cut in the box. You may need to shake the box hard to drop the cubes.

  6. Mix the sauce: simply mix 1 tbsp rice vinegar, 1 tbsp sugar and 1 tbsp soy sauce in an extra bowl.

  7. Serve the Tokoroten and dip the cubes into the sauce or mix it directly with the Tokoroten.

    What is Tokoroten?

    Tokoroten are usually thin noodles that consist of water and agar. Agar is a herbal and vegetarian remedy that is made from algae. To make the noodles, you need a so-called Toko-tsuki. With this utensil you press the cooled mass (water + agar) through a press with a grid. Similar to a pasta press. But since I and many others do not own this device, I cut my agar agar mass into small cubes. This also makes them better eatable :)

    How healthy is Tokoroten?

    Tokoroten are very healthy, because the almost calorie-free snack is eaten in Japan as a saturating agent. As a snack (chilled in the summer) you can prepare and enjoy it with different sauces. A perfect and very healthy snack.

    Where can I buy the ingredients for Tokoroten?

    For Tokoroten you really only need water, some vinegar and Agar Agar. Fortunately, I have a German product by Dr. med. Oetker discovers 100% Agar Agar. Just order it via Amazon (see preparation list)

    How does Tokoroten taste like?

    Tokoroten actually tastes like nothing. The herbal jelly is almost tasteless. Only the sauce is a carrier of the taste. Try different sauces.

    I have often prepared the following sauces. My favorite is and remains the simplest sauce :)

    The Sauce in this Recipe - My Favourite - Mild Tase

    • 1 Tbs Rice Vinegar
    • 1 Tbs Soy Saucee
    • 1 Tbs Sugar

    Kuromitsu Sauce - Sweet and salty

    • 1 tbs (heaped) brown sugar
    • 1 tbs (level) white sugar
    • 2 tbs water

    Kantō-Sauce - Spiced

    • 2 tbs Soy Sauce
    • 2 tbs Rice Vinegar
    • 1/4 minzed spring onion
    • 1 teaspoon mustard

      I got the agar podwer and will be trying your recipe today. I just dont know which sauce to try.

      Hallo, mir ist gerade dasselbe passiert wie Sascha. Die Angaben auf der Tüte verlangten nur 3.5 g Agar-Agar für 500 ml Wasser... im Kochbuch dann 10 g für 250 ml Wasser.
      
      Es wurde SEHR stabil, mit einer Farbe leicht ins Rostige und einem komisch-chemischen Nebengeschmack. 
      
      Werde mich morgen wieder dran wagen mit der Tütchen-Dosierung ;-) Bin gespannt :-)

        es gibt viele Hersteller von Agar Agar und da sind echt immer unterschiedlich eMengen an Agar Agar enthalten, sodass das Mischverhältnis wirklich immer anders ist *ärgerlich*. Nutze dann lieber die Packungsangabe, alles weiter mit den Zutaten bleibt so :) Am Ende sollte das Gelee leicht fest sein :)

      Hab das grade mal ausprobiert und nur das Rezept beachtet und dabei gar nicht auf die Packung des Agar Agars geachtet... Kann es sein dass es da oben 2g AgarAgar sein sollte, statt 20? ^^" Ich hab angst wenn ich meins fallen lasse erschlägts meine Deckenlampe ^^" 
      
      15g scheint mir etwas arg viel und auf der Packung des Pulvers hab ich grad das hier gelesen: 
      
      2 g (ca. 1 gestr. TL Agar Agar) GelierFix entspricht etwa 6 Blatt Gelatine und geliert 500 ml Flüssigkeit ^^"
      
      Ich hab so die leise Befürchtung euch ist da ein Komma verrutscht, kann das sein oder ist das absichtlich soviel Gelatine? ^^" Davon mal abgesehen find ich die Idee witzig, muss mir aber mrogen erst neues AgarAgar besorgen xD Jetzt ist mir auch klar wieso meins so komishc gelblich wurde und eures wie Wasser ausschaut ^^"

        Hi Sascha,
        ich habe die Agar Agar Packung von RUF genutzt. Da steht 15 gr sind für 500ml Flüssigkeit. Eventuell hängt es ja tatsächlich auch vom Hersteller ab. Komisch, da sollte man lieber auf die Verpackung gucken. Aber sehr guter Hinweiß, ich hoffe andere Scrollen soweit runter :)
